I was talking the other day with my American friend (Billy Bob) and he was telling me about this highly sophisticate dish of American cuisine but I can’t remember the name. Can you help me remember?

“American” cuisine varies widely by region. If his name is Billy Bob I’m betting it’s waffles and fried chicken or biscuits and gravy or somesuch. (fried rattlesnake? pickled okra? some other nightmarish sounding concoction?) Those types of things are actually much better than they sound. Then again, I’m a Nordic expat. I happen to eat lutefisk – and I like it. I’m not always the pickiest eater, in other words.
